Return of the Wolf
One of our earlier recipes featured a cheesy bread made with Wolf Among Weeds Double IPA. Since then Golden Road has released the wolf pack with their Wolf Mother Triple IPA and Wolf Pup session IPA. Today we will once again merge cheese with another wolf. The hoppy flavors from the Wolf Among Weeds and Wolf Mother would over whelm the palette in a cheese dip. However, the reasonably 5.4 percent in alcohol Wolf Pup would give use those wolf flavors without the overwhelming hops sensations.
Peppers and Wood Fire
Feel free to use about 6 cups or 1.5 pounds of the cheese of your choosing. I really wanted smoky and spicy flavors in my cheese. Although lacking in pepper, the Colby Jack provides a nice base as it is high in fat. The pepper Jack brings the spice and the Longhorn provide a smoky flavor.
I am also in love with pickling Anaheim peppers at the moment and wanted to add them in a recipe. Expect more future recipes to contain these peppers. But don’t let that deter your from experimenting. Certainly any pickled jalapenos would suffice. I wanted something on the sweeter side. I allowed pepper Jack to pick up the slack where the peppers would fall short.
Super Bowl Delight
This is quite an easy dish to make. I began making this dish 30 minutes before guests started arriving for our Super Bowl party. This was served with tortilla chips, but pretzel buns and breads work really well. You can even make the Wolf Among Weeds cheesy bread to compliment this recipe.
- We are going to make a beer roux. In a small sauce pan, melt the butter on medium heat. Add the flour and Wolf Pup and vigorously stir to make sure that the flour doesn't stick to the side of the pan. Let the roux come to a boil. If you like, add some of the pickle juice from your pickled Anaheim peppers.
- Grate all the cheese and add to the slow cooker. Transfer the roux into the slow cooker and set to low. Add chopped Anaheim peppers and stir. All cheese to cook in the slow cooker for an additional 20 minutes. You can leave the beer cheese in the slow cooker and use as a serving dish so long as you occasionally stir. Serve with tortilla chips or pretzel buns.
